What Type of Tea To Use?

This is an actual question that came from Cynthia Katiano from Colorado, who asked about what type of tea is best for producing kombucha tea.


First let's discuss what NOT to use for tea to produce Kombucha Tea:


Fruit Flavored Teas: Yep, they taste great but the essential oils to produce those flavored teas can cause your kombucha tea culture to get mold on it. Please note adding fruit flavored tea to already bottled organic kombucha tea is great and is recommended as a nice variation. Just do not use it to make your initial sweet tea for the culture to ferment.


Earl Grey: Early Grey is a very popular black tea. However, for those that do not know, earl grey is actually a fruit flavored tea as well. It is typically a black tea that is flavored with the oil of bergamot (think big lemon). There is a legend that the name comes from the British deputy Duke of Earl Grey, who was in charge of inspecting imported goods. The importers named it after him so they would not be taxed as heavily. That is why the word grey is spelled with an "e", instead of the color gray. So just like herbal flavored tea, this is not a good choice for brewing kombucha tea.



Green and Black - The Best of Both Worlds:

Green Tea is packed with Anti Oxidants, while Black Tea contains anti artery clogging polyphenols. For brewing kombucha tea, Green Tea is attributed to a milder taste while black tea is touted for a more effervescence.

There are also many other distinctions, and I recommend you mix and match and test different combinations as you continue to brew.
